摘要
自19世纪下半叶以来,西方营养学知识在中西交汇的背景下,首先以传教士为媒开始在中国传播;进入民国以后,营养学知识在知识来源、传播方式等方面均有更进一步的发展,通过一系列的知识生产与实践构建出了具有现代意义的营养学话语。其中,食物是由蛋白质、脂肪、维生素等营养素构成这一观念逐渐被广泛认同,并以“健康”之名渗入国民的日常生活。同时,营养学还被塑造为一种政治观点,将其与民族国家建设联系起来。在特定时代的社会背景下,营养学逐渐被建构成为一种科学、社会和政治的综合性话语。
Since the second half of 19 th century,under the background of meeting between China and the West,western nutrition knowledge was first spread in China by missionaries;after entering the Republican Era,nutrition knowledge had further development in knowledge sources and ways of dissemination,through a series of knowledge production and practice,the discourse of nutrition with modern significance is constructed.The concept that food is made up of proteins,fats and vitamins has gradually been widely recognized,and infiltrate the people’s daily life in the name of “health”.At the same time,nutrition is also shaped as a political point of view,linking it to the nation-state building.Under the social background of a specific era,it has gradually become a comprehensive discourse of science,society and politics.
