摘要
目的了解河南省流通环节食品中克罗诺杆菌属的污染状况,确定高危食品种类,为河南省流通环节的食品安全监管提供有效的科学依据,降低或避免对人民健康的危害。方法依照GB 4789.40-2016《食品微生物学检验克罗诺杆菌属(阪崎肠杆菌)检验》进行实验室检测。结果1497份样品中共检出克罗诺杆菌属阪崎肠杆菌27株,总检出率为1.80%。方便食品的污染情况最严重,检出率高达14.60%,其中芝麻糊受克罗诺杆菌属污染最严重,检出率高达50.00%;其次为藕粉,检出率为10.00%;麦片和其他谷物制品检出率较低,分别为9.46%和4.35%。婴幼儿辅助食品检出率为4.35%,其中婴幼儿面条受克罗诺杆菌属污染最严重,检出率为15.38%,婴幼儿米粉未检出克罗诺杆菌属。糖果制品、饮料和保健食品检出率较低,分别为0.50%、0.74%和0.62%,乳制品、膨化和薯类制品、肉类和糕点未检出。结论9类食品中检出克罗诺杆菌属有5类,应引起食品安全监管部门重视。
Objective To investigate the contamination status of Cronobacter spp. in the circulating food in Henan Province,identify the types of high-risk food,so as to provide effective scientific basis for the supervision of food safety in Henan Province,reduce or avoid risks to people’s health. Methods Laboratory test was performed in accordance with GB 4789. 40-2016National Food Safety Standards,Food Microbiological Examination,Cronobacter spp.( Enterobacter sakazakii) Examination.Results Twenty seven strains of Cronobacter spp.( Enterobacter sakazakii) were detected in 1 497 samples,and the total detection rate was 1. 80%. The most serious pollution was convenience food,and the detection rate was 14. 60%,among which sesame paste was most seriously contaminated by Cronobacter spp.,with a detection rate of 50. 00%,followed by lotus root starch,with the detection rate was 10. 00%;the lower pollution was observed in oatmeal and other cerealst,with the detection rate of 9. 46% and 4. 35%. The detection rate of cereal supplementary foods for infants was 4. 35%,among which the infant noodles were most seriously contaminated by Cronobacter spp.,with a detection rate of 15. 38%;and it was not detected in infant rice flour. Lower pollution was observed in candy products,beverage and dietary supplement,with the detection rate of0. 50%,0. 74% and 0. 62%,Cronobacter spp. was not detected in dairy products,puffed and potato products,meat and pastries. Conclusion Cronobacter spp. strains were detected from 5 of 9 kinds of food,which should attract the attention of food safety supervision departments.
