2018年-2021年台州市熟肉制品中亚硝酸盐含量分析及居民认知调查

Analysis of nitrite contents in cooked meat products during 2018-2021 and resident awareness survey in Taizhou City

目的 了解台州地区熟肉制品中的亚硝酸盐含量,并调查该地区某一社区居民对亚硝酸盐的认知情况。方法 2018年-2021年从台州市9个县市区分别采集熏烧烤肉类、肉灌肠、腌腊肉、酱卤肉、油炸肉制品等913份样品,采用分光光度法检测样品中的亚硝酸盐含量,并自拟问卷调查表,选定某一社区采用偶遇抽样法收集数据。结果 在913份肉制品中,亚硝酸盐的最大检出值为183.0 mg/kg(油炸肉制品),93.6%肉制品中的亚硝酸盐含量分布在10.0 mg/kg以下。肉灌肠的检出率最高,为77.5%;油炸肉制品的超标率最高,为8.8%。问卷调查结果显示,受访者对亚硝酸盐的认知有待提高。结论 台州地区五类肉制品中的亚硝酸盐残留水平较低,总体情况良好,需增加对散装熟肉制品的监测频率和力度。此外,应积极倡导合理膳食,培养健康饮食习惯。

Objective To understand the nitrite contents in cooked meat products in Taizhou during 2018-2021 and investigate the cognition of nitrite in a community. Methods A total of 913 samples including grilled meat,cured meat,meat enema,sauce braised pork and fried meat products were collected from 9 districts of Taizhou City from 2018 to 2021. The contents of nitrite were determined by spectrophotometry. Residents in a community were selected via random sampling interview to collect data by the proposed questionnaire. Results Among all meat products,the highest content of nitrite was 183. 0 mg/kg(sauce braised pork),and nitrite contents in 93. 6% meat products were below 10. 0 mg/kg. The detection rate of meat enema was up to 77. 5%. Exceeding rate in sauce braised pork was the highest(8. 8%). The results of cognition survey showed that the awareness of nitrite in respondents needs to be improved. Conclusion The levels of nitrite residue in the five types of meat products in Taizhou City were low and the overall situation was good. However,the frequency and intensity of monitoring on bulk cooked meat products should be increased. In addition,there is a need for advocating a reasonable diet and cultivating healthy eating habits.
