高校大学生食物浪费行为影响因素研究——以扬州大学为例

Research on the Influencing Factors of College Students’ Food Waste Behavior: A case study of Yangzhou University

中国粮食产量多年来保持着较高水平,但仍然需要意识到粮食安全的危机。减少食物浪费是保障粮食安全的有效途径之一。高校食堂的食物浪费问题已经引起越来越多的关注。基于768名高校大学生食物剩余数据,运用ologit模型对高校大学生食堂食物浪费行为进行实证分析。结果表明:性别、生活费、对食物浪费的基本态度、食物口味评价、是否参与“光盘行动”和体重认知对高校大学生食堂食物浪费的频率和比例有显著影响。同时,是否挑食会显著正向影响食物浪费的频率,年级和食物的盛放方式会显著影响食物浪费的比例。并针对高校大学生食物浪费给出相应的对策措施。

China has maintained a high level of grain production for many years, but still needs to be aware of the food security crisis. Reducing food waste is one of the effective ways to ensure food security. In recent years, the food waste problem in college cafeterias has attracted more and more attention. Based on 768 college students’ food surplus data, an empirical analysis of college students’ cafeteria food waste behavior was conducted using the ologit model. The results showed that gender, cost of living, basic attitudes toward food waste, food taste evaluation,participation in the "Operation Empty Plate" and weight perception have significant effects on the frequency and proportion of food waste in college cafeterias. Meanwhile, the frequency of food waste is positively influenced by whether the students were picky eaters or not, and the percentage of food waste is positively influenced by the grade level and the way the food was served. According to the result, the corresponding countermeasures are given for the food waste of college students.
