摘要
“建曲”一词最早出现于清代,但炮制工艺可追溯至明代。明清时期,福建各地方皆生产建神曲,名称也不尽相同。目前,各地建神曲炮制工艺差异较大,质量标准也相对简单,无法很好地控制其质量。本文旨在梳理建神曲发展的基本脉络,并对建神曲历代发酵工艺进行整理分析,以期为建神曲发酵工艺规范化和进一步研究提供依据。
The word"Jianqu"first appeared in Qing Dynasty,but the processing technology can be traced back to Ming Dynasty.During the Ming and Qing dynasties,Jianshenqu was produced in Fujian areas with different names.At present,the processing technology of Jianshenqu varies greatly,and the quality standard is relatively simple,so the quality can not be ensured.In this paper,we are purposed to sort out the basic context of the development of Jianshenqu and analyze the fermentation technology of Jianshenqu in different dynasties,in order to provide evidence for the standardization and further research of Jianshenqu fermentation technology.
