江苏省内熟制鸡胚蛋的理化及微生物指标分析

摘要 本文对江苏省内的熟制鸡胚蛋进行了食盐、挥发性盐基氮、重金属污染物和农药残留等理化指标检测,对真空包装样品进行了激素、食品添加剂理化指标以及商业无菌微生物指标检测,并对非预包装样品进行了大肠菌群、致病菌(沙门氏菌、志贺氏菌、金黄葡萄球菌)等微生物指标检测。结果表明,60批样品的食盐含量均在2%以下,真空包装样品含盐量普遍高于非预包装样品;8批次样品的挥发性盐基氮含量超过了15 mg/100 g,且全部为真空包装样品;真空包装样品中铅含量普遍高于非预包装样品。农药残留、激素、食品添加剂等理化指标以及微生物指标均为合格。 In this paper,the physical and chemical indicators of salt,volatile basic nitrogen,heavy metal pollutants,pesticide residues and other physical and chemical indicators were tested for cooked chicken embryo eggs in Jiangsu province.Microbial indicators such as coliform bacteria,pathogenic bacteria(salmonella,shigella,staphylococcus aureus)were tested and non-prepackaged samples were tested.The results showed that the salt content of 60 batches of samples were all below 2%,and the salt content of vacuum-packed samples was generally higher than that of non-prepackaged samples;the volatile base nitrogen content of 8 batches of samples exceeded 15 mg/100 g,and it is a vacuum-packed sample;the lead content in the vacuum-packed sample is generally higher than that of the non-prepackaged sample.Physical and chemical indicators such as pesticide residues,hormones,food additives,and microbial indicators are all qualified.
