摘要
槲皮素是一种重要的类黄酮物质,在水果和蔬菜中含量丰富。槲皮素可通过直接清除氧化自由基、鳌和金属离子、抑制脂质过氧化及调节抗氧化酶活性实现减缓机体氧化应激过程。槲皮素较强的抗氧化能力,使其对于因氧化应激导致的疾病有很好的预防和治疗作用。本文就近年来开展的槲皮素抗氧化作用和相关机制的研究进行综述。[营养学报,2022,44(2):204-208]
Quercetin is an important flavonoid, and abundant in fruits and vegetables. Quercetin can slow down the process of oxidative stress by directly scavenging free radicals, chelating metal ions, inhibiting lipid peroxidation and regulating the activity of antioxidant enzymes. With strong antioxidant properties, quercetin exerts great preventive and therapeutic effects on diseases caused by oxidative stress.
