高效液相色谱法测定香肠中脱氢乙酸的不确定度评定

摘要 根据《食品安全国家标准食品中脱氢乙酸的测定》(GB 5009.121—2016),香肠中脱氢乙酸的含量可以通过高效液相色谱法来测量。本文针对此问题,建立了相应的数学模型,并深入分析了影响结果不确定性可能的主要因素。此外,还对此模型的结果进行了详细的计算评定,得到脱氢乙酸含量为(0.153±0.032)g/kg,香肠的扩展不确定度是0.032 g/kg,k=2。研究结果表明,标准溶液的配制和拟合、样品测定的重复性是影响其结果不确定度的主要因素。为了提高检测结果的准确性,实验人员在操作过程中应严格遵守操作规程,减少不确定度分量。 According to GB 5009.121—2016,the content of dehydroacetic acid in sausage can be quantitatively measured by high performance liquid chromatography in this paper.Aiming at this problem,the corresponding mathematical model was established,and the main factors affecting the uncertainty of the results were analyzed.In addition,the results of the model were evaluated and calculated in detail.The expanded uncertainty of sausage with content of dehydroacetic acid(0.153 g/kg)was 0.032 g/kg,k=2.The results showed that the configuration and fitting of standard solution and the repeatability of sample determination were the main factors affecting the uncertainty of the results.Therefore,for improving the accuracy of determination results,the experimental personnel should strictly follow the operating procedures and reduce these uncertainty components.
