摘要 目前食品快速检测技术正向简单快速、成本低、准确可靠和灵敏度高等方向发展。而由于食品样品成分的复杂性和非法添加物质的不确定性,快速检测技术还存在一些问题,亟待优化。本文主要介绍快速检测技术的特点、种类及其在食品质量安全检测的应用,以期为快速检测技术的进一步发展提供参考。 At present,rapid food detection technology is developing in the direction of simplicity,low cost,accuracy,reliability and high sensitivity.However,due to the complexity of food sample composition and the uncertainty of illegally added substances,the rapid detection technology still has some problems and needs to be optimized.This paper mainly introduces the characteristics and types of rapid detection technology and its application in food quality and safety detection,in order to provide reference for the further development of rapid detection technology.
