摘要
目的:利用高效液相色谱法对蜂蜜中果糖、葡萄糖和蔗糖的含量进行分析,了解蜂蜜是否符合标准要求。方法:采用《食品安全国家标准食品中果糖、葡萄糖、蔗糖、麦芽糖、乳糖的测定》(GB 5009.8—2016)中第一法高效液相色谱法。结果:通过对16个蜂蜜样品进行测定,结果均符合GB 14963—2011中果糖和葡萄糖(g/100 g)≥60,蔗糖(g/100 g)≤5的要求,且结晶情况与果糖、葡萄糖含量高低有关。通过对不同地区同品种蜂蜜进行测定,果糖、葡萄糖、蔗糖含量略有差异。结论:本次测试中蜂蜜均符合要求。
Objective:To analyze the content of fructose,glucose and sucrose in honey by high performance liquid chromatography,and to understand the situation of honey on sale.Method:The first method of high performance liquid chromatography in GB 5009.8—2016 was adopted.Result:Through the determination of 16 honey samples,the results were all in line with the requirements of GB 14963—2011 fructose and glucose(g/100 g)≥60,sucrose(g/100 g)≤5,and the crystallization situation was related to the content of fructose and glucose.The content of fructose,glucose and sucrose was slightly different by measuring the same variety of honey in different regions.Conclusion:The honey in this test meets the requirements.
