高CO_(2)气调处理对刺芹侧耳采后木质化的影响 被引量:1

High CO_(2) Concentration Controlled Atmosphere Delayed Lignification of Pleurotus eryngii During Postharvest Storage

摘要 以大气环境为对照(CK,21%O_(2)+0.03%CO_(2)),通过测定感官指标、生理指标和木质化相关基因表达量,研究3组高CO_(2)气调处理(CA1:2%~4%O_(2)+16%~18%CO_(2);CA 2:2%~4%O_(2)+18%~20%CO_(2),CA3:2%~4%O_(2)+20%~22%CO_(2))对低温贮藏(0℃)3、6、9、12 d刺芹侧耳(Pleurotus eryngii)木质化的影响。结果表明:与CK相比,CA2和CA3抑制子实体采后色泽变暗和表皮皱缩,可有效保持其感官品质;与其他处理相比,CA3推迟子实体硬度和木质素含量上升,同时对木质素合成关键酶PAL和CAD的活性具有抑制作用;CA3对木质素合成相关的PePAL、PeCAD、PeC4H、Pe4CL基因的表达具有抑制作用。2%~4%O_(2)+20%~22%CO_(2)的气体环境能延缓刺芹侧耳冷藏期间的木质化进程。 Taking ambient air as the control(CK,21%O_(2)+0.03%CO_(2)),the effects of high CO_(2) concentration on the lignification of Pleurotus eryngii during controlled atmosphere storage after harvest were studied.Three treatment groups were set as follows:CA1,2%~4%O_(2)+16%~18%CO_(2);CA 2,2%~4%O_(2)+18%~20%CO_(2);CA 3,2%~4%O_(2)+20%~22%CO_(2).For each controlled atmosphere treatment,fruiting bodies of P.eryngii were stored at 0℃and sampled at day 3,day 6,day 9 and day 12 respectively to be determined for sensory indices,physiological indices and expression of lignification related genes.The results showed that compared with CK,CA2 and CA 3 prevented fruiting bodies from getting dark and shrinking after harvest,and effectively maintained their sensory quality.Compared with other treatments,CA3 delayed the increase of fruiting body hardness and lignin content,and inhibited key enzymes of lignin synthesis,i.e.,phenylalanine ammonia-lyase(PAL)and cinnamyl alcohol dehydrogenase(CAD).CA3 inhibited the expression of PePAL,PeCAD,PeC4H and Pe4CL genes related to lignin synthesis.The gas environment of 2%~4%O_(2)+20%~22%CO_(2) delayed the lignification process of P.eryngii during refrigeration.
