摘要
花青素的抗氧化活性研究是花青素抗氧化剂研发的基础,因此开展蓝莓花青素抗氧化活性研究为开拓花青素抗氧化剂奠定基础。蓝莓花青素的抗氧化活性是通过花青素对羟基自由基清除能力、DPPH自由基清除能力、ATBS^(+)自由基的清除能力、超氧阴离子自由基清除能力与Fe^(3+)清除能力等来体现。结果显示:花青素抗氧化活性与其所处的液体环境和提取方式等因素有关。蓝莓花青素对羟基自由基清除能力在一定浓度范围内,随花青素浓度增大而增大。蓝莓花青素对DPPH自由基、ATBS^(+)自由基、超氧阴离子自由基和对Fe^(3+)的清除能力显著高于Vc。不同蓝莓品种的花青素的抗氧化活性不同,研究不同蓝莓品种花青素的抗氧化活性对蓝莓精深加工具有重要意义。
The research on the antioxidant activity of anthocyanins is the basis of the research and development of anthocyanin antioxidants.Therefore,the research on the antioxidant activity of blueberry anthocyanins lays a foundation for the development of anthocyanin antioxidants.The antioxidant activity of blueberry anthocyanins is reflected by the ability of anthocyanins to scavenge hydroxyl radical,DPPH radical,ATBS^(+) radical,superoxide anion radical and Fe^(3+).The antioxidant activity of anthocyanins in different blueberry varieties is different.It is of great significance to study the antioxidant activity of anthocyanins in different blueberry varieties for blueberry deep processing.
