富硒食用菌最新研究进展

The Latest Research Progress on Selenium-Enriched Edible Fungi

硒是人体必需的微量元素之一,在维持机体健康方面发挥着重要作用。食用菌具有多种功效和药用价值,且对硒元素有较强的富集和转化能力,其凭借着独特的优势被研究者广泛关注。笔者从富硒食用菌的培养、活性成分、功效作用方面入手,综述了近几年富硒食用菌的栽培与液体发酵技术、富硒后活性成分的提取工艺,并系统总结了其药理作用的相关研究。同时对未来富硒食用菌的发展进行了展望,以期为富硒食用菌的研究与应用提供一定的参考价值。

Selenium is one of the essential trace elements in the human body and plays an important role in maintaining the health of the body.Edible fungi have many functions and medicinal values.Moreover,it has a strong ability to enrich and transform selenium,which is widely concerned by researchers because of its unique advantages.From the aspects of cultivation,active ingredients and efficacy of selenium-enriched edible fungi,this paper summarized the cultivation and liquid fermentation technology of selenium-enriched edible fungi in recent years,and the extraction technology of active ingredients after selenium enrichment,and systematically summarized the related research of its pharmacological effects.At the same time,the development of selenium-rich edible fungi in the future is prospected,in order to provide some reference value for the research and application of selenium-rich edible fungi.
