厨房低能耗通风系统研究

摘要 通过对多个项目的调研找到北方地区大型厨房能耗较大的原因,提出降低耗热量的技术路线。本文研究在操作区域设置送风风幕以减小热加工间补风能耗的节能方式。基于对排风罩效率的定义,采用CFD数值模拟得到采用风幕系统的最佳送风方向及送风速度,结果表明北方地区热加工间设置上送风幕灶台可将设计控制风速减小为0.4 m/s,即节能20%。 Through the investigation of many projects,the reasons for the large kitchen energy consumption in the northern region are found,and the technical solution to reduce the heat consumption is put forward.In this paper,the energy saving method of air supply screen in operation area to reduce the energy consumption of air supply in hot working rooms is studied.On the basis of the definition of exhaust hood efficiency,the optimal air supply direction and air supply speed of the air curtain system are obtained by CFD numerical simulation.The results show that the design control wind speed can be reduced to 0.4 m/s,that is,energy saving 20%.
