摘要
为进行贵州米酒智能化生产研究,利用数字化设计制造技术和智能控制技术,建设米酒智能生产示范线。从米酒酿造工艺出发,设计米酒自动酿造装置,介绍了装置系统组成、工作原理,开发了装置的自动控制系统。利用Fluent分析软件对发酵液做加热温度场分析,对发酵罐加热温度不均匀问题进行了优化。酿造实验表明出酒率达标,相比传统酿造,酒品品质更加稳定、产量更高。米酒自动酿造装置自动化程度高,可实现无人值守,每一批次的产品品质稳定性好,排放少,污染轻微。
In order to carry out the research on intelligent production of rice wine in Guizhou,an intelligent production demonstration line of rice wine is built by using digital design and manufacturing technology and intelligent control technology.Based on the rice wine brewing process,an automatic rice wine brewing device is designed,the composition and working principle of the device system are introduced,and the automatic control system of the device is developed.The heating temperature field of fermentation broth is analyzed by Fluent analysis software,and the problem of uneven heating temperature in fermentation tank is optimized.The brewing experiment showed that the yield of wine reached the standard.Compared with traditional brewing,the quality of wine was more stable and the yield was higher.The automatic rice wine brewing device has a high degree of automation and can be unattended.The product quality of each batch is consistent,with less emission and slight pollution.
