辣椒油树脂挥发性成分分析及其抗氧化活性研究 被引量:6

摘要 文章采用索氏抽提法提取了贵州干红辣椒的辣椒油树脂。通过顶空固相微萃取-气相色谱-质谱联用技术,对辣椒油树脂中的挥发性成分进行了分析,并采用面积归一化法计算了各主要组成成分的相对百分含量。同时,测定了辣椒油树脂的体外抗氧化活性。结果显示,在鉴定出的47种化合物中,主要化学成分为苯乙醛(15.05%)、糠醛(8.89%)、香橙烯(6.75%)、苯甲醛(5.48%)、γ-丁内酯(4.55%)以及2-甲基十三烷(3.20%)。以V_(C)为阳性对照,通过测定辣椒油树脂对DPPH自由基、ABTS^(+)自由基的清除能力以及总还原力与总抗氧化能力测试,研究了其体外抗氧化活性水平。结果表明,辣椒油树脂浓度为3 mg/mL时,对DPPH·、ABTS^(+)·的清除率可达78.0%和67.9%,显示出了较高的总抗氧化能力。文章为辣椒油树脂的高效利用提供了理论和技术支持。 In this paper,capsicum oleoresin is extracted from dried chilies in Guizhou by Soxhlet extraction method.The volatile components of capsicum oleoresin are analyzed by headspace solid-phase microextraction-gas chromatography-mass spectrometry(HS-SPME-GC-MS).The relative percentages of the main components are calculated by the area normalization method.At the same time,the antioxidant activity of capsicum oleoresin in vitro is determined.The results show that among the 47 kinds of identified components,the main chemicals are phenylacetaldehyde(15.05%),furfural(8.89%),aromadendrene(6.75%),benzaldehyde(5.48%),γ-butyrolactone(4.55%)and 2-methyltridecane(3.20%).With Vc as the positive control,the antioxidant activity of capsicum oleoresin in vitro is studied by determining the scavenging ability against DPPH free radicals,ABTS^(+)free radicals,total reducing power(TRP)and total antioxidant capacity(T-AOC).The results indicate that when the concentration of capsicum oleoresin is 3 mg/mL,the scavenging rate against DPPH·and ABTS^(+)·reaches 78.0%and 67.9%,showing a high total antioxidant capacity.The research has provided theoretical and technical support for the high-efficient utilization of capsicum oleoresin.
