冷藏菲律宾蛤仔活体中优势菌的分离鉴定、生长特性与致腐能力分析 被引量:1

摘要 在对菲律宾蛤仔活体冷藏过程中的腐败菌进行分离鉴定的基础上,对各菌株的生长特性及致腐能力进行了研究,最终确定了优势腐败菌。冷藏菲律宾蛤仔共分离得到7株腐败菌。其中,不动杆菌属的生长受温度的影响较小,而腐败希瓦氏菌在25℃下生长相对较好;除腐败希瓦氏菌外,其余6株菌在中性及添加1%NaCl的环境中生长良好;添加贝汁有助于缩短菌的生长延滞期,促进其生长繁殖。腐败希瓦氏菌、吲哚氧基假单胞菌、可萨假单胞菌的腐败因子显著较高,是冷藏菲律宾蛤仔的优势腐败菌。本研究可为有针对性地控制鲜活菲律宾蛤仔冷藏过程的品质劣变提供一定参考。 Based on the isolation and identification of spoilage bacteria in refrigerated live Ruditapes philippinarum,the growth characteristics and spoilage ability of each strain were investigated,and the dominant spoilage bacteria were finally determined.Seven strains of spoilage bacteria were isolated from refrigerated Ruditapes philippinarum.Among them,the growth of Acinetobacter was less affected by temperature,while Shewanella putrefaciens grew relatively well at 25℃.Except for Shewanella putrefaciens,the other six strains grew well in neutral and 1%NaCl environment.The addition of shellfish juice could shorten the growth lag period of strains and promote their growth and reproduction.The spoilage factors of Shewanella putrefaciens,Pseudomonas indoloxydans,and Pseudomonas khazarica were significantly higher,which were the dominant spoilage bacteria in refrigerated Ruditapes philippinarum.This research could provide some reference for controlling the quality deterioration of fresh Ruditapes philippinarum during refrigeration.
