摘要
食品化学实验是食品科学与工程专业的一门专业基础课,对于培养学生实验操作、自主设计实验、分析问题和解决问题的能力以及严肃认真、实事求是的科学态度和严谨的工作作风是非常重要的。基于工程教育专业认证“以学生为中心、产出导向、持续改进”的理念,结合食品行业人才培养需求,针对食品化学实验课程传统教学模式中存在的问题,对课程达成度评价体系和评价结果进行了分析,并提出改进措施,优化了教学内容,改革了教学模式,完善了考核方式,以持续提高教学效果和人才培养质量。
Food chemistry experiment is a professional basic course for food science and engineering major.It is very important to cultivate students’ability of experimental operation,independent design of experiment,ability to analyze and solve problems,serious and realistic sci-entific attitude and rigorous work style.Based on the concepts of“student-centered,output-oriented and continuous improvement”of engineer-ing education professional certification,combined with the talent training demands of food industry,in view of the existing problems in the tra-ditional teaching mode of food chemistry experiment course,the curriculum achievement evaluation system and evaluation results were ana-lyzed,some improvement measures were put forward,and the teaching contents were optimized.The teaching mode was reformed and the as-sessment method was improved,so as to continuously improve the teaching effect and talent training quality.
