摘要
为研究稻谷在CO_(2)气调储藏过程中水分对储藏品质变化的影响,以新鲜收获的粳稻和籼稻为研究对象,分别调整水分为12.5%和15.5%,并在37℃和20℃下密封储藏,在储藏的第0 d、第90 d、第180 d测定稻谷脂肪酸值、丙二醛、电导率、发芽率等指标,并结合感官评价进行综合分析。结果表明,CO_(2)气调储藏中不同水分稻谷在不同温度下储藏,高水分含量的稻谷脂肪酸值增加转TP,加速了丙二醛的产生,细胞电解质渗透增强,在其他储藏条件相同的情况下,水分含量增加对稻谷品质劣变有促进作用。因此,在气调储藏过程中,可通过降低水分含量抑制稻谷储藏品质变化,延长稻谷的储藏期。
To study the effect of rice grain moisture on the changes of rice grain storage quality during CO_(2) gas storage,freshly harvested japonica and indica rice were used for the study,and the moisture was adjusted to 12.5%and 15.5%,respectively,and stored in sealed storage at 37℃and 20℃,and the fatty acid value,malondialdehyde,electrical conductivity and germination rate of rice grain were measured at 0,90 and 180 days of storage.The results showed that the fatty acid values,malondialdehyde,electrical conductivity and germination rate of the rice grains were measured at 0,90 and 180 days.The results showed that the high moisture content increased fatty acid values,accelerated malondialdehyde production and enhanced cellular electrolyte penetration in CO_(2) gas storage at different temperatures,and that the increased moisture content promoted rice aging under the same storage conditions.Therefore,the storage quality changes of rice grains can be inhibited and the storage life of rice grains can be extended by reducing the moisture content during gas storage.
