不同产地秀丽白虾干风味物质GC-IMS指纹图谱分析 被引量:4

Fingerprint Analysis of Volatile Flavor Compounds of Dried Exopalaemon modestus from Different Habitats Based on Gas Chromatography-ion Mobility Spectroscopy

摘要 采用气相离子迁移谱(Gas chromatography-ion mobility spectroscopy, GC-IMS)对产自江苏太湖、安徽巢湖以及内蒙古呼伦湖的秀丽白虾干挥发性风味物质进行对比分析。根据挥发性物质的特征风味指纹图谱以及聚类分析结果,探讨不同产地秀丽白虾干风味差异。结果表明:3种秀丽白虾干样品中共检测鉴定出18种挥发性风味物质单体及其部分物质的二聚体,主要包括醛类、吡嗪类、呋喃类、酮类和醇类,其中呼伦湖白虾干中的挥发性物质最多,太湖白虾干最少。主成分分析结果指出不同产地白虾干中的挥发性有机物差异较大,指纹图谱相似度分析结果与主成分分析结果一致。GC-IMS对构建不同产地秀丽白虾干指纹图谱具有较好的应用价值。 Gas chromatography-ion mobility spectroscopy was used to compare and to analyze the volatile flavor compounds of dried Exopalaemon modestus produced from Tai Lake, Jiangsu, Chao Lake, Anhui and Hulun Lake, Inner Mongolia.The flavor difference of dried Exopalaemon modestus from different producing areas was discussed through the results of typical flavor fingerprint and cluster analysis of volatile compounds. GC-IMS results showed that from three kinds of dried Exopalaemon modestus samples, eighteen monomer and some dimers of part of the materials of volatile flavor compounds,including aldehydes, pyrazines, furans, ketones, and alcohols, etc, were detected and identified. Among those, the volatile compounds of dried Exopalaemon modestus from Hulun Lake was the most, and the one from the Tai Lake was the least. The results of principal component analysis showed significant difference on the volatile organic compound of dried Exopalaemon modestus from different producing areas. The result of Fingerprint similarity analysis was similar to that of the principal component analysis. GC-IMS contributed to the construction of fingerprint of dried Exopalaemon modestus from different producing areas.
