马铃薯中的酚类物质及其生物活性研究进展 被引量:2

Research Progress on Phenols and Their Biological Activities in Potatoes

摘要 马铃薯品种丰富、产量较大,是重要的食品加工原料。随着马铃薯加工业的发展,皮渣等副产物的产生不仅造成原料浪费而且增加环境压力,研究表明马铃薯皮中含有丰富的酚类活性物质,对人体健康具有抗氧化、抗菌、抗癌、降糖、抗炎等作用。文章综述了马铃薯中酚类物质的含量、组成、分布及其生物活性的研究进展,总结展望了今后的重点研究方向,旨在为马铃薯酚类物质的深入研究和科学开发及应用提供理论参考。 Potato is rich in varieties and large in production,and is an important raw material for food processing.With the development of potato processing industry,the production of by-products such as peel residue not only causes waste of raw materials but also increases environmental pressure.Studies have shown that potato peel is rich in phenolic active substances,which have antioxidant,antibacterial,anti-cancer,hypoglycemic,anti-inflammatory and other effects on human health.This paper reviews the research progress of the content,composition,distribution and biological activity of phenols in potatoes,summarizes and looks forward to the key research directions in the future,and aims to provide the theoretical reference for the in-depth research and scientific development and application of potato phenols.
