摘要
文章建立了一种快速测定中国白酒中2-苯乙醇含量的分析方法。采用直接进样-气相色谱-外标标准曲线法对中国白酒中的2-苯乙醇进行定量分析,用香气活力值法分析了2-苯乙醇在白酒中的香气贡献,并对各香型白酒中2-苯乙醇含量进行对比分析。结果表明:外标标准曲线的线性相关系数(R^(2))为0.9999,检出限和定量限分别为0.014 mg/L和0.056 mg/L,方法的回收率范围在95.49%~100.49%,相对标准偏差均在5%以内;豉香型、米香型白酒中的2-苯乙醇含量高于其他香型白酒中的含量,且在前二者中的香气活力值均大于1,浓香型白酒中2-苯乙醇的含量最低。直接进样-气相色谱-外标标准曲线法有效地分析中国白酒中2-苯乙醇的含量,为研究2-苯乙醇在中国白酒中整体香气贡献及白酒品质提升提供理论依据。
A rapid method was established for the determination of 2-phenylethanol in Chinese Baijiu samples.The 2-phenylethanol in different Chinese Baijiu samples was quantitatively analyzed using direct injection combined with gas chromatography(GC)and external standard curve method.The aroma contribution of 2-phenylethanol to the Baijiu was also studied by odor activity values(OAVs).Furthermore,The contents of 2-phenylethanol in different Chinese Baijiu samples were analyzed and compared.It was shown that the linear correlation coefficient of the external standard curve was 0.9999.The limits of detection and the limits of quantification were 0.014 mg/L and 0.056 mg/L,respectively.The recoveries ranged from 95.49%to 100.49%,and the relative standard deviation was below 5%.The contents of 2-phenylethanol in soybean flavor Baijiu and rice flavor Baijiu were higher than those of other flavor Baijiu samples,and the OAVs of 2-phenylethanol in soybean flavor Baijiu and rice flavor Baijiu were greater than 1,while the contents of 2-phenylethanol in Luzhou flavor liquor was the lowest.In conclusion,direct injection combined with GC and external standard curve method could be used to analyzed the contents of 2-phenylethanol in Chinese Baijiu samples effectively,which would be provided a theoretical basis for the overall aroma contribution and quality improvement of Chinese Baijiu.
