摘要
为促进蛋白质化学检测方法在食品安全评估与检测中的应用,介绍了凯氏定氮法和高效液相色谱法的化学检测原理,分析了其在蛋白质质量检测、快速分离及检测蛋白质含量中的应用,为准确、快速检测和分析食品中蛋白质含量、追踪食品来源、研究食品生产最佳条件提供理论依据。未来,蛋白质检测技术可以与其他技术相结合,以提高灵敏度,使食品蛋白质检测法在快速检测领域具有更加广阔的应用前景。
In order to promote the application of protein chemical detection methods in food safety assessment and detection,the study introduces the chemical detection principle of Kjeldahl nitrogen determination method and high performance liquid chromatography;analyzes its application in protein quality test,rapid disconnection and protein content test to provide theoretical basis for the accurate and rapid detection and analysis of protein content in food,the trace of food source and the research of the optimal condition of food production.In the future,protein detection technology can be combined with other technologies to improve sensitivity,to make food protein detection method face wider application prospect in rapid test field.
