摘要
鸡蛋富含蛋白质和多种功能活性肽,且利于人体消化吸收,是日常生活中质优价廉的营养补品。目前已经有大量研究证实鸡蛋中含有丰富的抗菌肽、抗癌肽、抗氧化肽、降血压肽和降血糖肽等功能活性肽。本文全面综述了近年来有关鸡蛋中功能活性肽的研究,为进一步研究和开发鸡蛋源活性肽奠定理论基础。
Eggs are rich in protein and a variety of functional active peptides,and are conducive to human digestion and absorption.They are cheap and high-quality nutritional supplements in daily life.A large number of studies have confirmed that eggs are rich in functional active peptides,such as antimicrobial peptides,anticancer peptide,antioxidant peptides,blood pressure-lowering peptides,and hypoglycemic peptides.This paper comprehensively reviews the research on functional active peptides in eggs in recent years,and lays a theoretical foundation for further research and development of egg-derived active peptides.
