一种以羊肝为原料的宠物诱食剂发酵工艺研究 被引量:1

摘要 本文以冷冻羊肝为原料,加入自制复合发酵菌种,通过响应面法优化得到最佳发酵工艺。用单因素试验研究鸡油添加量、混合糖粉比例、发酵底物湿度对发酵综合评分的影响,发酵综合评分中的pH以5.0为最佳标准,筛选出参数并采用Box-Benhnken响应面法优化三个因素获得了最佳发酵工艺。结果表明,最佳发酵工艺参数为每百克羊肝泥发酵底物湿度43%,鸡油添加量24 g,7 g混合糖粉比例为乳糖:蔗糖(W∶W)3.2∶3.8。在此条件下,37℃发酵7 d,发酵综合得分为97.01分,和预测值96.71分基本一致,说明复合微生物发酵剂发酵羊肝工艺可行。 In this paper,frozen sheep liver was used as the raw material mixing with self-made composite fermentation bacteria to obtain the optimal fermentation process by response surface methodology(RSM).The effect of the addition of chicken oil,the ratio of mixed sugar powder,and the humidity of the fermentation substrate on the comprehensive score of fermentation was studied through the one-factor-at-a-time method,and the best index of pH value in the comprehensive score of fermentation was 5.0.Then the parameters were selected through this one-factor-at-a-time method to help optimizing three factors by the Box-Benhnken response surface method to obtain the best fermentation process.The results showed that the optimal fermentation process parameters were 43% humidity per 100 grams of fermented sheep liver mud fermentation substrate with 24 grams added amount of chicken oil,and 7 grams of mixed sugar powder of lactose and sucrose with the ratio of(W ∶ W)3.2 to 3.8.Under such conditions,fermentation at 37℃ for 7 days has a comprehensive fermentation score of 97.01 points,which is basically consistent with the predicted value of 96.71 points.This shows that the technology of goat liver fermentation with compound biological starter is feasible.The results can provide a reliable basis for subsequent research on fermented pet food.
