摘要
黄曲霉毒素污染是引起食品安全问题的主要来源之一,如何快速、准确地筛查食品中的黄曲霉毒素是保障食品安全的关键所在。新型检测技术具有灵敏度高和分析速度快的优势,被广泛应用于黄曲霉毒素的检测。本文介绍了各种检测技术的基本原理,综述了其在黄曲霉毒素检测中的应用。
Aflatoxin contamination is one of the main sources of food safety problems,how to quickly and accurately screen aflatoxin in food is the key to ensure food safety.New detection techniques have the advantages of high sensitivity and fast analytical speed,and have been widely used in the detection of aflatoxin.This paper introduces the basic principles of various detection techniques and reviews their applications in aflatoxin detection.
