固相微萃取-气相色谱-质谱联用法分析石蜡中的挥发性成分 被引量:3

摘要 为研究食品接触材料中涂蜡纸的安全性,采用固相微萃取-气相色谱-质谱联用法来提取分析食品接触材料中涂蜡纸所用石蜡中的挥发性化学物质。通过NIST质谱库检索定性、峰面积归一法定量分析,结合相对气味阈值确定样品的气味特征和贡献。结果表明,5种涂蜡纸所用石蜡中共鉴别出22种物质,不仅含有直链烷烃、支链烷烃,还有烷基环烷基、烷基芳香烃和少量烯烃等其他物质;非微晶蜡和微晶蜡相比,化合物种类更多,且气味特征差别较大;国产石蜡和德国石蜡检测到的化合物种类差异较大,可见石蜡的挥发性物质与其来源有较大的关系。研究为食品接触材料的安全性评价及对食品风味的影响提供初步的参考依据。 The safety of waxed papers in food-contacting materials,the volatile compounds in paraffin of waxed papers were extracted and analyzed by solid phase microextraction coupled with gas chromatographic-mass spectrometry.The NIST mass spectral library was used to identify the main components of the volatiles and the quantitative analysis was performed by areas of peak normalization method in combination with the relative odor threshold to determine the odor characteristics and contribution of the sample.The results show that a total of 22 compounds were identified from the paraffin of five waxed papers,including normal paraffin hydrocarbons,branched paraffin hydrocarbons,and alkyl cycloalkanes,alkyl aromatic hydrocarbons and few alkenes.Nonmicro-crystalline waxes have more unsaturated hydrocarbon compounds than microcrystalline waxes,and the differences in odor characteristics are obvious.There was a great difference in compounds detected between the paraffin produced in China and the paraffin produced in Germany.It can be seen that there is a great relationship between the volatile substance of paraffin wax and its sources.This study provides a preliminary reference basis for the safety assessment of food-contacting materials and its effect on food flavor.
