家禽胴体清洗技术研究

摘要 家禽胴体冷却工序是HACCP控制点之一,在家禽胴体进入预冷工序之前,必须对其进行清洗。目前,家禽加工能力已经达到了15000只/h,人工清洗已不适宜,自动掏膛生产线上的胴体内外清洗设备也不能充分清除胴体膛内的污物。在家禽胴体冷却工序之前,采用的浸没清洗和沥水清洗相结合的两级清洗方式,可有效清洗并去除家禽内腔残留物,提高预冷工序的冷却水质量。清洗机的螺旋滚筒,采用椭圆形结构能使家禽胴体有规律翻滚,内腔残留物倾倒充分;浸没清洗时间为12~15s,浸没胴体翻滚次数为20~25次/min;沥水清洗时间为15~20s,沥水胴体翻滚次数为23~25次/min。这种线下作业的浸没清洗和沥水清洗相结合的两级清洗方式,人工掏膛和自动掏膛都适宜,非常适合国内大型家禽屠宰加工企业的广泛应用。 The poultry carcass cooling process was one of the HACCP control points,and poultry carcass must be cleaned before entering the pre-cooling process.At present,the processing capacity of poultry had reached 15000 birds/h,and manual cleaning was not suitable,and the dirt in the carcass bore could not fully removed by the internal and external cleaning equipment on the automatic cutting production line.Before the poultry carcass cooling process,the two-stage cleaning methodcombining immersi on cleaning anddraining cleaning was adopted,and it could effectively clean,and the residues in the poultry cavity could be removed,and the quality of cooling water in the pre-cooling process was improved.The spiral drum of the cleaning machine was designed with an oval structure,and the poultry carcass was rolled regularly,and the internal residues were fully dumped;the immersion cleaning time was 12~15s,and the number of rolls of the immersion carcass was 20~25 times/min;the draining cleaning time was 15~20s,and the number of rolls of draining carcass was 23~25 times/min.This two-stage cleaning method combining immersion cleaning and draining cleaning for offline operations was suitable for both manual and automatic tunneling,and it was very suitable forthe wide application of large poultry slaughtering and processing enterprises in China.
