摘要
绍兴加饭酒及其糟中代谢产物非常丰富。对绍兴加饭酒糟中代谢产物进行测定,共检测出除常规的酸、醇、酯等以外的物质271种,许多物质是首次检测报道。
Shaoxing Jiafan wine and its grains are rich in metabolites.The metabolites of Shaoxing Jiafan wine grains were determined,271 substances were detected except acids,alcohols and esters,and many substances were reported for the first time.
