食物中重金属检测方法的研究进展

Research progress on detection methods of heavy metals in food

重金属是密度大于5.0 g/cm^(3)的金属,虽然低浓度的重金属离子不会立即引起健康危害,但其会在生物体内积累。由于人类活动和地质条件的影响,重金属会以不同形式富集在土壤、大气和水体中,经食物链进入人体后危害人体健康。因此了解食物中重金属的污染现状及检测方法的研究进展至关重要。本文综述了食物中重金属的污染现状及检测方法,重点阐述了主要检测方法的原理、优缺点及研究进展,并对食物中重金属检测技术的未来发展趋势进行了展望。

Heavy metals are metals with a density greater than 5.0 g/cm^(3).Although low concentrations of heavy metal ions do not immediately cause health hazards,they can accumulate in organisms.Due to the influence of human activities and geological conditions,heavy metals can be enriched in soil,atmosphere and water in different forms and then get into the human body through the food chain,which can harm to human health.Therefore,it is very important to understand the research progress on current status of heavy metal pollution in food and their detection methods.In this paper,the pollution situation and detection methods of heavy metals in food are reviewed.The principle,advantages,disadvantages and research progress of main detection methods are expounded,and the future development trend of heavy metal detection technology in food are prospected.
