摘要
黄曲霉毒素(Aflatoxin)一词自1961年被人们所熟识,起初由于一场火鸡X病引起人们的注意,其种类很多,并不仅仅指一种化合物而是一类,此类化合物结构极为相近。其基本结构包括一个双氢呋喃环和一个氧杂萘邻酮,有剧毒性并且能导致癌症,50多年以来,人们不断地研究钻研,为了探索黄曲霉毒素的物理、化学性质和毒性特性,相关专业人士已经研制出了一系列检测和预防毒素的研究方法,从黄曲霉毒素的发现、种类和分子结构、物理化学的性质及毒理学研究、预防措施等展开论述。有助于在日常生活中提高人们的食品安全防范意识,在日常生活中注意毒素。
The term aflatoxins has been around since 1961,when it was first brought to attention by an outbreak of Turkey X disease,in which a wide variety of compounds,not just one but a class,are closely related in structure.Its basic structure consists of a dihydrofuran ring and an Oxo Phthalazinone,which are highly toxic and can cause cancer,and for more than 50 years people have been studying the physical,chemical property and toxic properties of aflatoxins,relevant professionals have developed a series of research methods to detect and prevent toxins,to discuss the discovery,species and molecular structure,physical and chemical properties of aflatoxins,as well as toxicological research and preventive measures.Help in daily life to improve our awareness of food safety precautions in daily life to pay attention to toxins.
