藜麦籽粒清洗液功能成分含量及抗氧化活性分析 被引量:1

摘要 以不同粒色藜麦为原料,利用去离子水清洗藜麦籽粒,分析清洗液的酚类、多糖和皂苷含量及抗氧化活性。结果表明:红藜麦清洗液总酚含量、总花色苷含量、DPPH·清除力及FRAP还原力最高。黑藜麦清洗液多糖含量、皂苷含量及ABTS~+·清除力最高。白藜麦清洗液活性成分含量及抗氧化活性均较低。原儿茶酸、水杨酸和香草酸分别是黑色、红色和白色藜麦清洗液中最丰富的多酚,飞燕草素为三种清洗液中主要的花色苷。单体酚与抗氧化活性之间具有一定相关性。 The colored quinoa grains were cleaned with deionized water, and the contents of phenolics, polysaccharide and saponin and antioxidant activities of the cleaning solutions were analyzed.The results showed that the total phenol content, total anthocyanin content, DPPH· scavenging power and FRAP reducing power of the cleaning solution from red quinoa were the highest.The polysaccharide content, saponin content and ABTS· scavenging power of the cleaning solution from black quinoa were the highest.The active ingredients contents and antioxidant capacity of the cleaning solution from white quinoa were relatively low.Protocatechuic acid, salicylic acid and vanillic acid were the most abundant phenolic acids in black, red and white quinoa cleaning solution, respectively, and delphinidin was the main anthocyanin in the three cleaning solution.There was a certain correlation between monomeric polyphenol and antioxidant activity.
