摘要 开发了一种基于可溶可食壳聚糖淀粉并具有抗菌功能的可食用保鲜膜。用小麦和玉米淀粉作为可食用膜的原料,再以甘油、山梨醇为增塑剂,以海藻酸钠为膜基质与氯化钙交联成膜,使膜有更好的整体性,还可让膜有更好的透明性、耐水性,以防止吸水导致的食品变质;基于壳聚糖的生物降解性、生物相容性和可食用性,将其用作膜的辅助材料,因其自身具有良好的抗菌性,很好地抑制了可食用膜微生物的生长,从而使可食用膜得到了进一步完善。 An edible fresh-keeping film based on soluble and edible chitosan starch with antibacterial function is developed.Using wheat and corn starch as raw materials of edible film,glycerol and sorbitol as plasticizers,sodium alginate as film matrix and calcium chloride as crosslinking agent,the film has better integrity,transparency and water resistance,so as to prevent food deterioration caused by water absorption.Based on the biodegradability,biocompatibility and edibility of chitosan,chitosan is used as auxiliary material of the film.Because of its good antibacterial property,chitosan can well inhibit the growth of edible film microorganisms,so that the edible fresh-keeping film has been further improved.
