食品中非法添加物质情况及其检测方法研究概述

Research on Illegally Added Substances and the Relevant Detection Methods in Food

近年来,部分食品为了提高产品销量,非法宣称具有保健功能或治疗作用,甚至非法添加相关物质以增强其非法宣称的功能。本文以非法宣称减肥、增强免疫力、缓解体力疲劳、辅助降血糖和药品治疗作用(如止咳、止疼、解热等)的食品为代表,结合日常监管部门的报道、文献和国家市场监督管理总局关于开展固体饮料、压片糖果、代用茶等食品专项整治情况,综述了食品中非法添加物质的现状和特点,并对主要存在的问题进行归纳分析,同时从检测技术方面,对目前食品非法添加物质筛查方法及常用检测技术进行了总结,以期为食品非法添加物质行为的发现提供借鉴与参考。

In recent years, in order to increase product sales, some foods are illegally labeled with health functions or therapeutic effects, and even are illegally added with some substances to enhance their claimed functions. Represented by foods that illegally claim to lose weight, enhance immunity, relieve physical fatigue, assist in lowering blood sugar and drug treatments(such as cough, pain, antipyretic, etc.), and combined with the daily reports and documents from various regulatory departments and the special rectification referring to solid drinks, pressed candy, substitute tea and other foods issued by the State Administration for Market Supervision(SAMR), we summarize the current situation and characteristics of illegal added substances in foods, and analyze the main problems in this paper. At the same time, from the aspect of detection technology, we summarize the current screening methods and common detection technologies of illegal added substances in foods in this paper, in order to provide references for the discovery of illegal added substances in foods.
