摘要
采用空调控温储粮技术开展稻谷品质变化研究实仓试验,跟踪分析稻谷过夏期间品质指标变化情况。结果表明:过夏期间稻谷水分及各品质指标变化波动均较小,且水分、品尝评分值、发芽率、米汤pH值均呈下降趋势,而脂肪酸值、米饭吸水率、膨胀率均呈上升趋势;空调控温储粮技术能有效抑制夏季仓温及粮堆表层温度的升高,延缓稻谷品质劣变,实现绿色保质储藏。
In this paper,air-controlled and temperature-controlled grain storage technology was adopted to carry out the experiment to study the change of paddy quality.Through tracking and analyzing the change of paddy quality indexes during the summer,the results showed that:During summer,the variation range of water content and quality indexes of paddy was small,and water content,taste score value,germination rate and pH value of rice soup all showed a decreasing trend,while fatty acid value,water absorption rate and expansion rate of rice all showed an increasing trend.The experimental results show that the air-controlled temperature storage technology can effectively restrain the temperature rise of the warehouse and the temperature of the surface grain in summer,thus delaying the deterioration of paddy quality and realizing the green storage.
