微生物蛋白作为优质替代蛋白资源的应用研究 被引量:2

摘要 食品资源可持续供给是目前世界各国重点攻关的关键领域,也是重要的民生保障.伴随着世界人口激增、人群消费结构不断升级,传统畜牧业所提供的优质蛋白有效供给不足与人类社会可持续发展的矛盾日益突出.同时,传统畜禽产业在适应新时代节能减碳目标下也面临着巨大挑战,因此非传统畜禽养殖来源的蛋白质原料开发对于缓解全球蛋白质供给危机、维持农业可持续发展具有重要意义.本文首先分析了目前主要非畜禽源的蛋白原料及应用,在此基础上,聚焦微生物蛋白,分析了微生物蛋白的来源、应用现状,并对未来发展趋势进行了展望. Sustainable food supply is a research focal point in many countries.With the ever increasing of the world population.we face the challenge of optimization and upgrading of the consumption structure,and the contradiction between the insufficient supply of high-quality protein provided by traditional animal husbandry and the sustainable development of human society.Moreover,the traditional livestock and poultry industry is also challenged by energy suppy and carbon reduction in the new era.Therefore,the development of new protein materials from non-traditional livestock and poultry industry is of great significance to alleviate the global protein supply crisis and maintain the sustainable development of agriculture.In this review,we analyze the main new protein materials from non-livestock and poultry and their applications.Furthermore,we also summarize the current situation and development trend of single cell proteins.Moreover,the existing problems and future development trends are addressed.
