摘要
为探究移栽期对‘云烟87’烤后烟叶碳氮代谢产物及感官质量的影响。本研究以云烟87为试验材料,采用田间小区随机区组试验设计,分析3个移栽期对烤后烟叶碳氮代谢主要产物总氮、烟碱、总糖、还原糖及感官质量的影响。结果表明,随移栽期的推后,中、上部烟叶总氮和烟碱均呈现先降低后升高的趋势;其中4月30日移栽处理总氮含量最高,而烟碱含量最高的则是4月10日移栽处理。上部烟叶总糖和还原糖含量随移栽期的推后呈单峰变化,均在4月20日达到峰值;而中部烟叶总糖和还原糖含量则随移栽期推移逐渐降低,总体以4月10日移栽处理含量最高。不同移栽处理中,4月20日移栽处理的感官质量最佳,香气特性、烟气特性、口感特性等均优于其他移栽期处理,烟叶可用性较强,其次是4月30日移栽处理的中部叶。综合化学成分、感官质量和烟叶可用性等因素,德江煎茶产区以4月20日移栽较为适宜。
In order to explore the effect of transplanting period on carbon and nitrogen metabolites and sensory quality of cured ’Yunyan 87’tobacco leaves. In this experiment, ’Yunyan 87’ was used as the material, and the random block test design was adopted in the field plot to study the effect of three transplanting periods on the carbon. The main products of the nitrogen metabolism, total nitrogen, nicotine, total sugar, reducing sugar and the effect of sensory quality. The results showed that with the passage of the transplanting period, the total nitrogen and nicotine of the middle and upper tobacco leaves decreased first and then increased. It was transplanting on April 10. The contents of the total sugar and reducing sugar in the upper tobacco leaves showed a unimodal change with the delay of the transplanting period, and both reached the peak on April 20;While the contents of the total sugar and reducing sugar in the middle tobacco leaves gradually decreased with the advancement of the transplanting period, and the total was 4.5%. The highest content was in the transplanting treatment on October 10.Among different transplanting treatments, the sensory quality of transplanting on April 20 was better, and the aroma characteristics, smoke characteristics and taste characteristics were better than other transplanting treatments, and the availability of tobacco leaves was stronger,followed by transplanting treated middle leaves on April 30. Taking into account factors such as chemical composition, sensory quality, and availability of tobacco leaves, it is more suitable for transplanting on April 20 in the Dejiang Sencha production area.
