摘要
奶酪是营养价值非常丰富的乳制品,作为新兴食品在近年开始逐步受到越来越多的消费者的关注和喜爱,因此如何高效生产和最大化保留奶酪中的营养成分是奶酪生产商积极探讨和研究的方向。超滤膜技术目前在食品制造业拥有广泛的关注,在提高目标产物含量和提高工业生产效率上均有所成效。利用超滤膜技术对传统奶酪加工工艺进行改良和应用具有广阔的市场前景和社会经济效益。文章对利用超滤膜技术生产预制奶酪的制作方法进行了可行性试验,以供参考。
Cheese is a dairy product with rich nutritional value.As a rising food,it has gradually been popular among consumers.Therefore,how to efficiently produce and to maximize the retention of nutrients in cheese is what cheese producers actively researching on.Nowadays,food manufacturing industries show extensive attention in ultrafiltration membrane technology,and the technic has achieved good results in improving the content of target products and industrial production efficiency.Applying ultrafiltration technology to improve the traditional cheese processing method has broad market prospects and social-economic benefits.In this paper,the production methods of pre-prepared cheese by ultrafiltration membrane technology are used by feasibility test for reference.
