摘要
食用菌是富含多种维生素的健康食品。食用菌中维生素的测定方法主要包括高效液相色谱法、液质联用法和荧光分光光度法等方法。通过对近年来食用菌维生素的测定方法进行综述,并对未来发展进行展望,以期为食用菌维生素测定标准的建立提供参考。
As a kind of healthy food, edible fungi have many vitamins.The determination methods of vitamins in edible fungi mainly include liquid chromatography, liquid chromatography-mass spectrometry and fluorescence spectrophotometry. The methods of vitamins determination in recent years are reviewed, and the future development is prospected, in order to provide a reference for the standard establishment of vitamins determination of edible fungi.
