摘要
为了对食用油中矿物质元素的营养价值进行综合比较和评价分析,以17种食用油样品为研究对象,采用微波消解-火焰原子吸收光谱法对食用油所含的6种矿物质元素Ca、Mg、Fe、Zn、Cu、Cr进行了测定,并结合中国居民膳食营养素参考摄入量对18~50岁的一般人群每日从食用油中摄入矿物质元素的量进行分析和风险评估。计算结果表明:17种食用油中均含有丰富的Ca、Mg、Fe、Zn、Cu、Cr矿物质元素。DB值显示:除玉米油、菜籽油、橄榄油之外,其余食用油对女性所需求比例的满足程度略高于男性。经%RNI(AI)、%UL评估结果表明:17种食用油中的矿物质风险指数较低,在食用油的推荐摄入量下矿物质均无过量摄入的风险,进一步验证了人体从17种食用油中摄入矿物质元素的量是安全的。
In order to synthetically compare and evaluate the nutritional value of the mineral elements in the edible oils,the content of the mineral elements Ca,Mg,Fe,Zn,Cu and Cr in 17 edible oils were determined by microwave digestion-flame atomic absorption spectroscopy method.The amount of dietary nutrient intake from cooking oil in the general population aged 18 to 50 was analyzed and risk assessed by combining the daily reference intake of Chinese residents.The results showed that the six mineral elements(Ca,Mg,Fe,Zn,Cu,Cr)in 17 edible oils were all rich.The DB value showed that except corn oil,Canola oil and olive oil,the other edible oils met the needs of the proportion of women slightly higher than men.The evaluation results of%RNI(AI)and%UL showed that the mineral risk index were lower in 17 edible oils,and there was no risk of excessive mineral intake under the recommended intake of edible oil,which further verified that the human body was safe to consume minerals from 17 edible oils.
