食品安全与营养始终是人们关注的焦点。近几年,食品种类呈现出多样化发展趋势,加之各种新型食品加工技术应运而生,使得食品安全与营养问题的关注热度越来越高。因此,在食品加工过程中,相关人员需要分析食品加工技术的基本原理,并判定其对食品安全和营养产生的影响,进而在确保食品绝对安全的前提下,使食品的营养价值达到最大化。本文将着重围绕食品加工技术种类及其对食品安全与营养产生的影响进行全面阐述。
