摘要
姜埋奶是以新鲜牛奶和现榨姜汁为主要原料制成的一种传统名优小吃。本文对传统姜埋奶的原材料选择、制作工艺与凝结原理进行了分析和研究,并分析了姜埋奶的现代制作工艺与传统制作异同和优缺点。
Ginger milk is a traditional famous snack made from fresh milk and fresh ginger juice.This paper analyzes the selection of materials,processing technology and coagulation principle of ginger milk.Besides,the similarities and differences,advantages and disadvantages between the modern processing technology and the traditional processing technology of ginger milk were analyzed.
