Simultaneous Determination of Six Heavy Metals in Peanut by Inductively Coupled Plasma-Mass Spectrometry and Health Risk Assessment

摘要 目的:研究建立电感耦合等离子体质谱法测定枣庄市售花生中6种重金属含量的方法并进行健康风险评估。方法:采用微波消解-电感耦合等离子体质谱法测定花生中6种重金属元素(Cu、As、Cd、Cr、Pb和Ni)的含量,利用靶标危害系数(Target Hazard Quotient,THQ)及综合危害指数(Total Target Hazard Quotients,TTHQ)评价食用市售花生对成人和儿童带来的潜在重金属健康风险。结果:6种元素在相应范围内线性良好(r>0.9986),仪器精密度良好(RSD<3.5%),加标回收率在88.79%~94.81%。市售花生中各重金属元素含量都低于现行国家食品中污染物限量值,未出现超标现象;居民通过花生摄入的各重金属的单一靶标危害系数(THQ)及综合危害系数(TTHQ)均小于1。结论:微波消解-电感耦合等离子体质谱法可用于花生中6种重金属元素的同时测定。研究区域内市售花生质量较好,没有明显的重金属健康风险。 Objective:To establish a method for the contents of six heavy metals in market peanut of Zaozhuang City by inductively coupled plasma-mass spectrometry(ICP-MS)and assess the potential health risks.Method:Samples were pretreated by microwave digestion,and six heavy metals(Cu、As、Cd、Cr、Pb、Ni)were determined by ICP-MS.By the target hazard quotient(THQ)and comprehensive target hazard quotients(TTHQ)to assess the potential health risks to adults and children by peanut ingestion.Result:The linear range of the six elements was good,the correlation coefficient was greater than 0.9986,the precision was good(RSD<3.5%),the recovery rate of standard addition was between 88.79%~94.81%.The contents of six heavy metals were far lower than the current guidance of the limits of contaminants in food value.Both THQ and TTHQ values were less than 1.Conclusion:The microwave digestion ICP-MS method is suitable for the simultaneous determination of six heavy metals in peanut.The quality of market peanut in the studied area was good and there were no obvious health effects on humans.
