青甘韭(Allium przewalskianum)在曲奇饼干制作中的应用研究

摘要 资源植物的应用研究作为自然资源可持续利用研究中的重要内容之一,对资源植物的合理开发与应用有着极其重要的参考价值。本文以传统食用植物中的青甘韭为研究对象,通过实地调查和访问等方式对其进行采集和食用现状的了解,选取不同含量(0%、5%、8%和11%)的青甘韭制作曲奇饼干,并制定其配方和制作步骤,对其在曲奇饼干中的应用及其最适含量选择从总人数、民族比例和性别比例进行了初步的对比与分析。调查结果发现,青甘韭主要作为调味料食用;最受欢迎的青甘韭粉含量为5%,选择其含量的人数占调查总人数的39%;5%含量的青甘韭曲奇饼干最受汉族学生喜欢,8%含量的青甘韭曲奇饼干最受藏族学生喜欢;0%~5%含量最受女生喜欢,5%~8%含量最受男生喜欢。不同含量青甘韭曲奇饼干味道整体上都受到了不同程度的欢迎,其受欢迎程度与民族、性别等有关。 As one of the important contents in the sustainable utilization of natural resources,the application research of resource plants has extremely important reference value for the rational development and application of resource plants.In this paper,Allium przewalskianum in the traditional edible plant was taken as the research object.Through field investigation and interview,we collected and understood the current situation of its consumption.We selected Allium przewalskianum with different contents (0%,5%,8% and 11%) to make cookies,and formulated its formula and production steps.We made a preliminary comparison and analysis of its application in cookies and its optimal content selection from the total number of people,ethnic proportion and gender proportion.The survey results found that:in the study area,Allium przewalskianum is mainly eaten as a seasoning,mainly used in various foods with soup and potatoes;among the four different contents,the most popular is 5%,choose the number of its content accounted for 39% of the total number of respondents;Among the four different content,Han students liked 5% content,Tibetan students liked 8% content;Girls liked 0%~5% content,boys liked 5%~8%;The taste of Allium przewalskianum cookies with different contents is generally welcomed to varying degrees,which is related to ethnic groups and gender.
