摘要
不同形式的灯光对肉制品色泽影响有所不同。通过550 lx、2700 lx两种照度的荧光灯和LED灯,3200 K、5600 K两种色温的LED灯照射放入冷藏柜内的火腿肉,按一定周期进行火腿肉的红度值测试。结果表明,不论是LED灯还是荧光灯,过高的照度均会加速肉制品的变色;LED灯对肉制品色泽的影响低于荧光灯;蓝光成分过高的LED也更容易引起肉制品色泽发生改变。
Different forms of light have different effects on the color of meat products.In this research,ham meat placed in the refrigerator were illuminated by fluorescent lamps and LED lamps with 3200 K and 5600 K color temperature at 550 lx and 2700 lx illuminance,and the redness values of the ham were tested at certain test intervals.The results show that whether LED lamp or fluorescent lamp,higher illuminance would accelerate the discoloration of meat products;the influence of LED lamp on the color of meat products is lower than that of fluorescent lamp;LED with high blue light content is also more likely to cause change in the color of meat products.
