摘要
按照抗性淀粉种类的不同,对回生淀粉和化学改性淀粉的制备方法进行介绍,并综述了抗性淀粉在改善肠道环境、调节血糖和控制体重方面的功能及其在食品添加剂、功能性食品和药物载体中的应用.最后对抗性淀粉未来的发展趋势进行展望.
According to the different types of resistant starch,the preparation methods of retrograded starch and chemically modified starch are introduced.The functions of resistant starch in improving the intestinal environment,regulating blood sugar and controlling weight and its application in food additives,functional foods and drug carriers are reviewed.Finally,the future development trend of resistant starch is prospected.
