苹果内部成分含量的比较分析及产地溯源 被引量:1

摘要 具有国家地理标志保护产品的阿克苏“冰糖心”苹果经常被假冒,为解决此问题,以甘肃的花牛苹果、静宁苹果作为对比,分析3个产地的苹果内部成分含量的差异,在总糖、总酸、还原糖、有效酸和可溶性糖含量上,阿克苏“冰糖心”苹果与花牛苹果都具有显著性差异;在总酸、还原糖、可溶性糖含量上,“冰糖心”苹果和静宁苹果具有显著性差异;花牛苹果和静宁苹果在有效酸含量上具有显著性差异。成分含量上的差异会导致高光谱曲线的差异。因此,借助于高光谱技术,在900~1700 nm波长范围内,采集阿克苏“冰糖心”苹果、花牛苹果、静宁苹果的高光谱数据,通过连续投影算法(SPA)提取特征波长变量,建立对苹果产地的贝叶斯判别分析模型。结果表明,训练集的准确率为95.68%,测试集的准确率为98.15%,分类识别的效果较好,对苹果的产地溯源具有重要的参考意义。 Aksu's“Bingtangxin”apples protected by the National Geographic Symbol are often counterfeited.In order to solve this problem,the internal components of apples from Aksu,Huaniu and Jingning were analysised.The results showed that there were significant differences in the contents of total sugar,total acid,reducing sugar,available acid and soluble sugar between“Bingtangxin”apples and Huaniu apples.There were significant differences in the contents of total acid,reducing sugar and soluble sugar between“Bingtangxin”apples and Jingning apples.There were also significant differences in the contents of effective acid between Huaniu apple and Jingning apple.The difference of composition content would lead to the difference of hyperspectral curve.With the help of hyperspectral technique,the hyperspectral data of“Bingtangxin”apple,Huaniu apple and Jingning apple were collected in the wavelength range of 900~1700 nm.The effective variables were extracted by continuous projection algorithm.Bayes discriminant analysis model was established,the accuracy of training set was 95.68%,of test set was 98.15%.The result of identification was good,which had significant reference for apple origin tracing.
