摘要
文章详细论述了“一带一路”背景下岭南饮食文化的特征及嬗变。岭南饮食文化有其自身固有的传统特点,也处于常新常异的创新发展之中。整体上,其具有生猛、鲜淡、清美的特色,用料奇特广博,技艺精细,趋时而变,集中西之长,勇于创新。在“一带一路”推进过程中,岭南饮食文化发挥了独特的作用,其海外影响力不断提升。研究岭南饮食文化,是对岭南饮食烹饪文化成就、经验的理论概括,也是对岭南文化的弘扬、继承和发展,有助于推动民族文化的国际化,提升民族文化的自信力。
This paper discusses in detail the characteristics and evolution of Lingnan food culture under the background of "the Belt and Road". Lingnan food culture has its own traditional characteristics, and is also in the development of innovation. On the whole, it has the characteristics of vigor,freshness and beauty with peculiar and extensive materials and exquisite skills, changing from time to time, concentrating on the advantages of the west and the east, and being brave in innovation. In the process of "the Belt and Road",Lingnan food culture has played a unique role and its overseas influence has been increasing. The study of Lingnan food culture is a theoretical summary of the achievement and experience of Lingnan cuisine culture. It is also the promotion, inheritance and development of Lingnan culture, which helps to promote the internationalization of national culture and enhance the self-confidence of national culture.
