摘要
在“宅经济”、快生活节奏、餐饮连锁化等多重因素共同推动下,预制菜行业快速发展。受制于规模、工艺、设备等,预制菜加工行业存在菜品风味与营养保障措施有待提高、安全隐患大、有影响力的品牌较少等市场问题。因此,应在优化工艺、保障菜品安全、制定相关产品标准方面加强研究,提升预制菜品质,满足消费者需求,促使预制菜行业可持续发展。
Driven by multiple factors, such as “house economy”, fast life pace, and catering chain development,the prepared dish industry has developed rapidly. Subject to scale, technology, equipment, etc., prepared dish processing industry has market problems such as the need to improve the food flavor and nutritional protection measures, the potential safety hazards, and the lack of influential brands.. Therefore, should optimize the process, ensure food safety, formulate related product standards to strengthen research, improve the quality of prepared dishes, meet consumer demand, promote the sustainable development of prepared dish industry.
