摘要 随着经济飞速发展、时代不断进步,各种美食层见叠出,随之而来的食品安全问题和健康问题也越来越多。近年来越来越多的研究表明过多摄入反式脂肪酸可能会导致糖尿病、动脉粥样硬化等疾病的发生。本实验采用气相色谱法对市售的15种食品中反式脂肪酸的含量进行检测,采用面积归一化法进行计算,通过数据分析得到食品中反式脂肪酸含量,以期能够提醒人们有意识地避免食用反式脂肪酸含量高的食品。 With the rapid development of the economy and the continuous progress of the times, a variety of delicious foods emerge one after another, and there are more and more food safety and health problems. In recent years, more and more studies have shown that excessive intake of trans fatty acids may lead to diabetes, atherosclerosis and other diseases.In this experiment, the content of trans fatty acids in 15 kinds of food on the market was detected by gas chromatography,calculated by area normalization method, and the content of trans fatty acids in food was obtained by data analysis, in order to remind people to consciously avoid eating foods with high content of trans fatty acids.
